Inspired by Paradise Bakery and Cafe's Strawberry Poppyseed and Chicken Salad I made this very simple, sweet, light and cool summer salad:
Ingredients:
-grilled chicken breasts seasoned with salt and pepper
-sliced strawberries
-sliced pineapple
-fresh blueberries
-crushed raw almonds
-fresh organic spring salad mix
Dressing:
-1/2 c. vegetable oil or light virgin olive oil
- 2 T. dijon mustard
- 2 T. honey
-1/2 c. apple cider vinegar
- 1 t. poppy seeds
Mix dressing ingredients until incorporated. Pour 1-2 tablespoons (or to your liking) over a handful of spring salad mix. Mix greens and dressing. Top with handful of thinly sliced grilled chicken, a couple spoon fulls of strawberries, a couple spoon fulls of pineapple, a couple spoon fulls of blueberries and a spoonful of crushed almonds.
